The Curly Stu, Based in Co Cork was set up by professional chef Stuart Bowes who has over 25 years experience working in Michelin star restaurants and 5 star Hotels. Stuart started his obsession with making Neapolitan style pizzas in 2017 He bought a wood fired oven and started perfecting his craft selling pizzas on Monday evening’s in a rural pub using the finest of Italian and Irish ingredients. The Neapolitan pizzas were well received and very quickly word got around, resulting in Stuart restoring a horse box and making his business mobile in 2020.
His main focus is and has always been on the dough. He started using a sourdough culture to make his pizza dough and has since changed to a pre ferment method using poolish which is made the day before mixing dough resulting in maximum flavor but more importantly, A fully digestible and light pizza.
The pizzas are all cooked in under 90 seconds between 400-450 degrees celsius. And the only way that we can turn out large sums of pizzas with such speed and consistency is by using the best ovens in the market...
